How to make litti chokha
Litti, along with chokha is a complete meal. It is famous dish of Bihar. It is also popular in jharkhand. It is very tasty recipe
Step 1: Make a dough for litti
For dough, take 2 cup wheat flour, add ½ tsp salt, ¼ tsp baking soda, 1 tsp ajwain, 1 tbsp ghee. Mix well, add water and make a soft dough. Now cover it and rest for 15 min.
Step 2: Stuffing for litti
For stuffing, take 1 cup sattu, add 1 medium size finely chopped onion, 1 inch finely chopped ginger, 2 finely chopped green chili, 1 tbsp finely chopped coriander leaves, ½ tsp black salt, salt a/c to taste, lemon juice, 1tbsp mustard oil and 2 tsp pickle seasoning (achar ka masala). Now mix well. Add water as required and mix with hand. Stuffing is ready.
Step 3: Chokha for litti
For chokha, take 7-8 boiled potato, 1 brinjal and 1 tomato (fried and peel off) and mix well. Now add1 medium size finely chopped onion, 1 tbs finely chopped coriander, 2-3 finely chopped green chilli, 1 inch finely chopped ginger, ½ tsp black salt, ½ tsp salt, 1 tsp lemon juice, 1 tsp mustard oil and mix well. Chokha is ready.
Step 4: Red chutney for litti
For red chutney, 5 dry red chilli (soaked for ½ hour), 3 garlic, 1 tomato, salt a/c to taste, add water and grind. Red chutney is ready.
Step 5: Green chutney for litti
For green chutney, take coriander leaves, 3 garlic, 3 green chilli, 1 small chopped ginger, ½ tsp salt, ½ tsp black salt, ½ lemon juice, pinch of sugar, add water and grind. Green chutney is ready.
Step 6: Make litti
Now take portion from dough, round it with hand, now make place inside it. Fill sattu stuffing and cover it now flat it with hand. Make all litti like this. Put a stand on gas. Put litti and cook in low flame from both sides.
Step 7: Serve
Serve litti along with chokha and 2 kind of chutney.
